I have been doing heavy projects that doesn’t leave me to much time to white about my project at the moment.

Here are some of the project that I will be talking about next month.

dehydrating and canning.

I will have a new kitchen, our current one is not too workable so I am in the process of rebuilding a new kitchen that works.  I will be talking about that too.

I will also be finishing up the sour dough post.

Preaparation for Sourdough

If you have been following my blog and you have your starter ready to be used now I will teach you to get ready to make your sourdough.  You make sourdough with the discarted starter do this before you refresh your starter the starter needs to not be feed it should be like a liquid after 3 days or 1 week since you feed it.

Now if you reasently feed your starter you will have to wait,  if you are ready to make sourdough this is what you will need.

Large mixing bowl

2 Cup water

3 Cups baking flour or regular flour

1 Cup of sourdough Starter.

(If you want really sour bread you will have to start this night before.)

in the bowl put in water, starter and get them intergrated.  Whisk in flour one cup at a time till it’s fully intergrated.  Cover with damp towel if your baking on the same day, if over night cover with plate so it doest lose too much moisture.

after 3 to 4 hours it will develop bubbles or a froth if you wait for it to be a froth your bread will rise better later.  Over night you can start it soon as you want to but don’t let it rest more than 12hrs it will affect the rising of the bread.

Chicken Curry

This is by far my favorite dish to make when it’s cold outside, witch it is raining outside and feel like making something good for lunch.  Chicken curry is not hard to make it’s a skill level from 1-10 I give it a 7 cause you have to hover over it most of the time. You cannot leave this dish alone till you put in the liquids.

I know there are lot’s of variations on this dish today we are just making a simple version that I came up with.

You will need:

1 Large Pot

1 Large Onion

1 Cup Canola Oil (vegetable oil/ Olive oil)

Curry Powder

2 Cups Regular Yogurt (or Heavy cream/ half half)

1-2 Cup of Water

1 Can or 2 1/2 Cup Puree tomato sauce

Frank’s RedHot Hot Sauce

2 Bay leafs

salt

Long grain rice

Chicken (Leg/breast any part of chicken) Or any other Bird

Now if you have the ingredients above you have the makings of the sauce

Vegetables (Here are some ideas on what types you can put in or optional if you have none)

2 medium Potatoes

1 Jalapeno

5 large mushrooms

1 zucchini large

1 medium size carrot

.25 quarter of a large eggplant

3 Cloves of garlic (peeled)

1/2 Cup Black olives

You can add all the vegetables I listed or even ones I did not list you can be creative in what you put in just make sure your not adding on more liquid.  And more vegetables you add the less liquid you can scoop out so be cautious on amounts of vegetables you add.  You can also just prepare the vegetables separate and scoop them in last.

Make sure you have all your ingredients in grabbing reach makes cooking easy.

Lets begin with Putting oil in your pot in low heat, chop the onion you want to mince the onion into small bits as seen in the picture.  (I can make a whole tutorial on just chopping vegetables for sakes of keeping this short I will be showing just finish chopped vegetables If you want to learn to chop vegetables look forward to Chop, chop, chop *Shink* Cut your vegetables)

Once you have chopped your onion,

put it in the pot and stir it around, add garlic, bay leaf and jalapeno if you want to make it spicy (do not add if you do not want to make it spicy). You have to keep it on low if you do not want to burn your onion,  you want to caramelize it.

Chop your vegetables to bite size, stir your onions every few min if your seeing burned onion or smell burned onion decrease the heat.

Maybe by the time your done with your vegetables your onion will provably will be done they should look like this and smell of heaven.

 Add 6Tbsp of curry powder, mix that around until it not clumping.  Add your tomato sauce, Yogurt, Hot Sauce, and water add 1 Cup first if it looks soupy do not add more if its thick sauce add as necessary to make it soupy most of the water will evaporate by the end. Stir it around.

Put in your Desired Meat, Vegetables, Root’s and hard to cook vegetables first, thin and fast to cook vegetables you will be adding 10 min before you take it off the stove.


 Cook your rice, rice should be done before the curry is done or after just keep your curry in the lowest heat possible to keep it warm.  I like to add some Fennel to my rice to give it a wonderful aroma. Add salt if you want but the curry will be salty enough.

Check on your Curry it should be thick, vegetables should be almost or already cooked trough.  Do a taste test if it needs more curry dissolve some in some cold water put in, salt and hot sauce to liking. Add the rest of your vegetables wait till they are cooked.

Serve on a Flat plate with a large spoon Enjoy, don’t eat bay leafs set them aside.

Potato wedge (spiced)

The potato wedge to eat or not to eat?

I don’t like going out to crappy places that you have to pay for bad food,  the food your buying should be good for you.  Not 3hrs of stomach ache,  9hrs of bad gas.

So…

This is what your going to do. 

Step 1

First thing you want to do,  get a large skillet,  put in 1 to 1 1/2 Cup vegetable oil at medium heat.

Get yourself a potato or two, now peel them.  Too lazy that’s okay just skip to step 3.

Cut your potato half way first, then make 45% cuts.

Now keep doing this till all your potatoes are cut into wedges.

Fry only the the amount that the surface can accommodate all them being flat. Do not pile them on, you will only make a big mess.

Were Going to fry this for about 5min on each side or till golden brown.

Wile we wait to flip over our wedges lets mix our spices.

80% garlic powder, 15% Paprika, 5% salt

You be the judge, you can be creative in spicing your fry more salt less salt etc..

Don’t be in a hurry to flip them all at once, Flip one at a time it helps to tongs handy.

Cool wile this side cooks lets get out paper towels layerd out on a plate or rack I am using a cooling rack.

Once you take out the fry’s put in more fry in the oil. Till you are finish.

Let the cooling fry’s drip all the excess oil about a min.

Put the semi hot still little oil on them and shake them, put a plate over the bowl if it helps.

Re move from bowl, onto serving plate.

The most important step of them all enjoy them with your option of dip, they go great with ranch or any other dipping sauce.

Sourdough Starter

Sourdough

Sourdough possibly the most delicious bread and the most easy to make bread.  Without a sourdough starter you won’t be making any sourdough and using yeast won’t give you the Sour taste sourdough is known for.

If you are lucky enough to know someone who already has a starter ask them for a cup, or you could buy it but our motto is “do it yourself”.  I will teach you step by step to make your berry own starter in a week or 2. You will have a starter that you could indefinitely use for making sourdough, that you could share pass on to other people.

Making sourdough is not difficult, neater is time consuming and it will only cost your about 2$ in materials to make Two large Loafs.


Starter in Jar 

Here is what you need to make your starter:

Water 100F

1/2 Cup Flour

1/2 Cup Water

1 Large Bowl

1 Thin Towel (thin enough for air flow but)

Large Mason Jar

Whisk

Large rubber band or hair tie or string

A warm place no hotter than 90F and no colder than 68F your choice

 

Starter

Day 1

In the bowl mix in 1/2 Cup water, 1/2 Cup of flour, you should get a batter that looks like pancake batter. Cover with towel, put rubber band around the bowl to secure the towel and place on warm place.

Day 2

In the morning uncover and whisk it again.  At night whisk it again.

Day 3

In the morning you will be feeding it, mix in 1/2C Flour, 1/2C Water directly into bowl and whisk it till smooth. Cover and place back in warm place. At night Whisk it again. You will be feeding it every other day.

Day 4

In the morning uncover and whisk it again.  At night whisk it again.

Continue this routine till you have mixed in about 4 cups of flour that’s about a week, if you are starting to see bubbles in the mornings or froth on top of your starter congratulations you have captured the necessary bacteria to grow your starter.  If nothing yet take out 2 Cups of the batter and throw it away (optional you could feed it to your chickens or pig).  Repeat this process as necessary to keep room for expansion about half the space.

If by 2 weeks you haven’t gotten results many things could be affecting your growth of bacteria.  Here are some problems and solutions.

-Using tap water that may have chemicals that prevent bacteria from growing example bleach in water. Use spring water, Distilled water would solve your problem.

-If the starter freezes or it’s too cold the bacteria won’t grow, keep the temperature relative even while you’re trying to capture starter.

-sterile environment, put by an open window put it outside during sun hours, place in a shady area.

Starter seperatedIf you have had successes in capturing your bacteria do not feed it for 3 days, your starter will expand 2or3 fold so make sure it has space to expand.   Once it flattens back down and looks like liquid your starter is ready to use.  If your starter has a layer of clear liquid do not panic that’s normal.  That’s the bacteria turning sugars in the flour into alcohol just mix it before using.  The sour smell will develop over time it should start smelling sour by a month.

From now on you don’t need to feed it every day, only once every 3 to 4 days.  When you make sourdough bread make sure you always have at least 1 Cup of starter left to grow more. There is no need to refrigerate your starter at all but if you want to make it grow or eat slower put it in the fridge.  But if you keep it in the fridge your sour smell might not develop or even go away and will take weeks to make it recover it smell so be careful.  If you’re going away for a week I recommend putting it somewhere cool like a basement or fridge but even cold bacteria need to eat it could die if they don’t get fresh mix of water and flour.  If you’re planning to be gone for more than a month Freeze it or have someone look after it.  If you Freeze it, take it out when you need it and let it sit for a day and feed it normally and within a week it will recover.  This is a good method to keep some Starter if you ever get mold growing on your batch.  If mold grows on your starter stop do not use throw it away re start your starter, now if you froze some in advance it will only take you week to bake.

RefreshedReasons to why your starter might grow mold it gets contaminated by a fungus or other unwanted bacteria. Refresh your jar every other week, the jar will build up layers of flour over time making it possible for unwanted bacteria to grow on. Also making it harder to get your starter out.

Soak your jar with hot water to remove this crust, put your starter aside covered with a towel.  Clean your jar well,  Feed your starter and pour back into jar and cover.

Moving In to new Blog!

I have always hated people who think you need to revolve around money,  I hate big corporate, Stupid ads, Stupid people, angry people, war, those are just some of my dislikes.

Let’s be realistic Most people now can’t live with out money, and commodities that come with having a little extra money.  Once you take care of Rent, bills, Transportation, food, these are the 4 main things you always have to take care of first if you want to keep the way of life you are in now.  These are some of the commodities you might indulge in but never thought about;  cellphone, Internet, Cable,  Alcohol, going to the Movies/rent, pets, Nice new Car, Vacations, and you can insert whatever Commodity you have to pay for that really doesn’t seem necessarily needed but you must have here:”______________’ and it can be anything.

I will be Blogging about how you can make, grow, prepare, repair, even trade something you make/grow/don’t want for something you need and more.

I promise you it won’t be easy,  hard work never is.  I was brought up by strong people that I love, you can say they are my heroes.  But they can’t do everything for me for ever.

Our generation is growing up in a harsh world, were the Rich get richer and the poor people well we can’t really hit bottom since were there,  but you still can.  People in middle class is shrinking and I don’t mean they are getting richer most are getting poor.

We all need to move on from the “want”, to what really matters and need.
